Apple Pear Pancakes with Glaze

These pancakes are the reason I got up this morning.... well, sort of : ) It helps to have motivation like this.

There is nothing better than a stack of pancakes for breakfast, especially one's like these.

I had some apples and pears that I needed to use up and sort of used that as an excuse to be a little decedent. So if you have some overripe apples or pears, dig 'em out of the back of your fridge and lets have a pancake party.

Let me give you a few good reasons to wake up tomorrow morning:

Number #1: This - savory apples and pears simmered in butter and sugar and yummy goodness:

Number #2: This glaze - more naughty stuff mixed with apples and pears creating a glaze unlike anything your mouth has tasted:

Apple Pear Pancakes with Glaze

The process is basically simple, but you will need a blender and about 6 apples (less if they are large). I used about 7 small apples. Plus one large pear to top it off.

Apple-pear Glaze:
3 apples cored, peeled, sliced
One pear, cored, peeled, and sliced, one piece set aside
6 Tbsp butter
1/4 cup water
Dash of cinnamon
Dash of allspice
1/2 cup brown sugar

The Pancake Batter:
1/2 cup milk
1/2 cup sour cream
4 apples cored, peeled, with a little bit of lemon to prevent browning (plus the extra pear slice from the glaze)
2 Tbsp sugar
2 eggs
2 tbsp butter, melted
1 tsp vanilla
1 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
Dashes of allspice
Extra splashes of milk if needed
Extra butter for the skillet

For Glaze:
Melt three Tbsp of butter in a large skillet or saucepan on medium high heat. Once hot throw in sliced apples and pears. Let simmer for 3-5 min. Add spices. Add about 3 Tbsp of the brown sugar. Let fuze together until sugar is melted and glossy and the apples and pears are completely softened (but not mushy).
Take off heat and set aside to cool slightly.

For the Pancakes:
Heat a skillet on medium heat until water scatters.
Throw apples, milk, sour cream and sugar in a blender and mix well. Add the two eggs, melted butter, and vanilla then blend those as well.
Sift dry ingredients into a large bowl.
Pour wet ingredients into dry and mix until combined.

Add some butter to the skillet and dump three ladles of batter into the pan. Cook until bubbly then flip. The great thing about these pancakes is that they remain decently warm for a time.

While the pancakes cook, heat a small saucepan on medium high heat and add the rest of the butter and sugar and water (from glaze ingredients) and boil until ingredients combine.
Meantime take half of the pears and apples that are cooked and puree them in a blender. Once the glaze in the saucepan combines and simmers for 7-10 min add the puree to it and continue to simmer for another 3 -5 min.
Serve stacks of pancakes with apple and pear chunks on top with glaze dribbled over the top.

 
So now you've read about these pancakes, you've seen them, you've drooled (I hope), now there's only one thing left to do:
