When I'm in the states, and the weather is appropriate, there is nothing I love more than an Iced Caramel Macchiato... the layers of flavor - the mix of sweet and bitter is pure bliss.

Since I don't have the option of going to Starbucks anytime soon, I decided to get a life, and make my own Caramel Macchiato!

Yes, I just punned. I'm sorry, I couldn't help it. But seriously, making caramel, and in this case, caramel sauce is hard - it's way too easy to burn.

Here is a almost-fool-proof method.  You can still burn it, but the chances are much less likely than with the traditional method. Try it! It's super yummy - you'll want to lick the entire jar.

These muffins have it all - lots of cream! I have wanted to see how the combination of lemon and mint would turn out - and it ended up being a great combination that was fresh and different. If you like mint, and if you like lemon - you'll want to try these!

First we make the cream for the center, then the batter. While these babies bake, we make the frosting.
