Blueberry Banana Pancakes

Summer is the perfect time to take advantage of fresh fruits. Ripe yellow bananas and the first of the season's blueberries. Yum.

These pancakes taste like cake hot out of the oven. They're like a little slice of summer.

Ingredients:

  • 2 cups Milk + 1 Tbsp Lemon
  • 2 whole Bananas
  • 2 whole Eggs
  • 4 Tablespoons Melted Butter (plus Xtra For Cooking)
  • 1 teaspoon Vanilla Extract
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Honey, Fluid
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 cup Blueberries Coated In 2 Tbsp Flour + 1 Tbsp Sugar

Instructions:

Combine milk and lemon and set aside.

Mash banana and mix with eggs, extract, sugar, honey, and butter.

Sift together dry ingredients. Combine banana mixture and milk mixture, then add to dry ingredients. Mix until just incorporated. Let sit covered for 5-10 minutes.

Heat pan on medium high heat. Coat with butter.

After coating blueberries with sugar and flour, add them to the batter and fold together, being careful not to mix any more than you have to.

Dump 1/4 cup fulls of batter into the pan and flip when bubbles stop. Re-coat the pan with butter in between batches.

Serve with maple syrup and a big cup of coffee!
